Objectives

1. Examine in detail the mechanisms of postmortem softening of fish flesh. Isolate & characterise the collagenolytic enzymes responsible.
2. Locate the enzymes in the tissue.
3. Explore potential uses for the enzymes in seafood and food processing. Provide recommended handling procedures if appropriate.
